To me, it would depend on the quality (and price) of the wine. If I’m paying $8/glass, no big deal, but if I’m paying $20/glass I’d probably even ask them to open a fresh bottle for me. My wife doesn’t drink wine, so by the glass is usually how I drink it in restaurants.
…and that’s the funny thing! I’ve never heard someone say: “Hmmmmmm….this tastes like it was poured from a combination of two bottles!!!” It’s only when they SEE it being done that it all of a sudden becomes a problem.

Taste it. If it tastes good, no probs. Otherwise ask for a fresh glass just as if the first glass had been corked.
