  Grape Prosecco di Valdobbiadene [Val-do-bi-ad-en-ay]   Facts Prosecco is made using a much simpler method than true Champagne. Instead of fermenting in the bottle (as Champagne is), Prosecco grapes are fermented in large stainless steel vats.
